½ tablespoon (30 mililitres) extra-virgin olive oil
½ yellow onion, small diced
3 cloves garlic, minced
1 teaspoon (5 grams) fresh thyme leaves
4 teaspoons (20 grams) kosher salt
2 teaspoons (10 grams) ground black pepper
3 tablespoons (45 grams) tomato paste
4 tablespoons (60 mililitres) Worcestershire sauce
¼ cup (60 mililitres) chicken broth
1½ pounds (680 grams) ground beef (80% lean, 20% fat)
1 cup (120 grams) unseasoned breadcrumbs
2 large eggs, whisked

2 tablespoons (30 grams) parsley, chopped, for garnish

Directions
STEP 1
Heat a large sauté pan over medium-high heat. Add extra-virgin olive oil to coat the pan evenly, then add the onions, garlic, thyme, salt, and pepper. Cook until the onions are translucent, about 5 to 8 minutes.
STEP 2
Add the tomato paste and brown over low heat for 3 minutes. Stir in the Worcestershire sauce and chicken broth, then turn off the heat.
STEP 3
Combine the ground beef, garlic mixture, breadcrumbs, and whisked eggs in a large mixing bowl. Shape the meatloaf into an oval loaf on a cutting board and set aside.
STEP 4
Cut a square sheet of parchment paper to fit the crisper plate of the Cosori Smart Air Fryer.
STEP 5
Place the crisper plate into the air fryer basket, then place the parchment paper square onto the crisper plate, followed by the meatloaf.
STEP 6
Spread the ketchup across the top of the meatloaf.
STEP 7
Select the Bake function, adjust temperature to 335°F (165°C) and time to 45 minutes, then press Start/Pause.
STEP 8
Remove the meatloaf when done and allow the meatloaf to set and cool for 10 minutes before transferring to a serving platter to slice and serve.
STEP 9
Garnish the top with chopped parsley and serve immediately.
